How to Make Your Vegan Cookies Crispy on the Outside & Gooey in the Middle
For that perfect cookie texture – a crispy outer edge with a soft, gooey centre – follow these simple tips:
Use Melted Butter: Melted vegan butter adds moisture to the dough, helping achieve a soft, gooey centre while keeping the outside crisp.
Chill the Dough: After mixing, chill the dough in the fridge for at least 30 minutes. This firms up the fats, helping the cookies spread less and maintain that delightful soft middle.
Slightly Under-bake: Bake the cookies until the edges are golden and crisp, but the centres look slightly underdone – usually around 8-10 minutes. The cookies will firm up as they cool but retain that perfect gooey middle.
Baking Temperature: Bake at a higher temperature, around 180°C (350°F). This allows the edges to cook quickly and turn crispy, while the middle remains soft and chewy.
Leave Space for Spreading: Place the cookies a few inches apart on the baking tray. Giving them room to spread helps with even cooking, creating that classic crispy-on-the-outside texture.
With these tips, you’ll get beautifully textured chocolate chip cookies every time – crispy, gooey, and irresistibly delicious!
How to Store Your Cookies After Baking
To keep your vegan chocolate chip cookies fresh and delicious for as long as possible, follow these storage tips:
Room Temperature: Store the cookies in an airtight container at room temperature for up to a week. Add a small piece of bread to the container to help retain their softness – the bread will release moisture, keeping your cookies chewy without affecting their flavour.
Freezing for Longer Freshness: If you’d like to enjoy your cookies over a longer period, place them in a freezer-safe container or resealable bag. They’ll stay fresh in the freezer for up to three months! Just let them thaw at room temperature or warm them up in the microwave or oven for a fresh-baked feel.
Avoid Refrigeration: Refrigerating cookies can dry them out quickly and make them go stale faster. Room temperature or frozen storage is best to maintain that perfect chewy texture.
With the right storage, you’ll have delicious cookies on hand whenever you’re ready for a sweet treat!
What to Do if Your Vegan-Friendly Cookies Go Stale?
If your cookies lose a bit of their fresh-baked softness, don’t worry! Here are some easy tricks to bring them back to life:
Quick Microwave Revival: Pop a cookie in the microwave for 10-15 seconds. This will soften it slightly, making it warm and gooey again – perfect for an instant treat!
Oven Refresh: Preheat your oven to 150°C (300°F), place the cookies on a baking tray, and heat for 5-7 minutes. This gentle warming can restore their chewy centre and crisp edges.
Apple Slice Trick: Place the cookies in an airtight container with a slice of apple. The apple’s natural moisture will soften the cookies overnight, without altering the flavour.
Crumb for Desserts: If the cookies are too far gone, turn them into a crumb topping! Crush the cookies and sprinkle over vegan yoghurt, vegan ice cream, or even your favourite vegan dessert for added texture and flavour.
Serving Suggestions
These homemade vegan-friendly chocolate chip cookies are delicious on their own, but here are a few ways to make them extra special:
Classic with a Twist: Serve warm with a glass of oat or almond milk for a comforting, plant-based treat. The creamy texture of the milk perfectly balances the cookies' rich, chocolatey taste.
Ice Cream Sandwiches:Place a scoop of dairy-free vanilla or chocolate ice cream between two cookies for an indulgent vegan ice cream sandwich – perfect for warm days or a luxurious dessert.
Cookie Crumble Topping: Crumble the cookies over vegan yoghurt, smoothie bowls, or even dairy-free puddings for a crunchy, chocolatey addition.
Gourmet Style:Pair these cookies with a hot espresso or a freshly brewed cup of tea to bring out the flavours of the dark chocolate and add a sophisticated touch.
Fruit Pairing: Serve alongside a handful of fresh berries, like strawberries or raspberries, to complement the chocolate’s richness with a burst of freshness.

Made these for my afternoon ‘go to’ vegan snack, they are super easy to make and tasty.
I tried these cookies yesterday, and they turned out AMAZING. Perfectly gooey in the middle with just the right amount of crunch on the edges. Plus, no one guessed they were vegan!
Mmmmmm chocolate!
My favourite snack with a glass of almond milk.
I can’t believe these Vegan Chocolate Chip Cookies are dairy-free – they’re so soft and chewy! My non-vegan friends couldn’t tell the difference. This recipe is a keeper!
