Ingredients
-
6 oz (170 g) high-quality dark chocolate, finely chopped
-
½ cup (113 g) unsalted butter, cubed
-
2 large eggs
-
2 large egg yolks
-
¼ cup (50 g) granulated sugar
-
1 teaspoon vanilla extract
-
¼ cup (30 g) all-purpose flour
-
Pinch of salt
-
Butter and cocoa powder, (for greasing ramekins)
Directions
Prepare the Ramekins
Preheat your oven to 425°F (218°C).
Generously butter four 6-oz ramekins, then dust lightly with cocoa powder to prevent sticking.
Melt the Chocolate & Butter
In a heatproof bowl, combine the chopped dark chocolate and butter.
Melt using a double boiler or microwave in 20-second bursts, stirring each time until smooth.
Let cool slightly.
Make the Batter
In a separate mixing bowl, whisk together the eggs, egg yolks, sugar, and vanilla extract until light and slightly frothy (about 2 minutes).
Slowly pour in the melted chocolate mixture, stirring continuously.
Gently fold in the flour and salt until just combined (do not over mix).
Bake the Lava Cakes
Divide the batter evenly among the prepared ramekins.
Bake for 10-12 minutes, or until the edges are set but the center is still slightly soft and jiggly.
Let the cakes rest for 1 minute, then carefully run a knife around the edges and invert onto plates.
Serve Immediately
Dust with powdered sugar or cocoa powder.
Garnish with fresh berries or a scoop of vanilla ice cream.
Serve while warm to enjoy the molten chocolate centre!
