Preheat and Prepare:
Preheat your oven to 180°C (160°C fan) / Gas Mark 4.
Line a 33cm x 23cm Swiss roll tin with baking parchment, ensuring it overlaps the edges for easy removal.
Make the Sponge for the Log:
In a large mixing bowl, whisk the eggs and caster sugar together with an electric whisk for about 5–7 minutes, or until the mixture is pale, thick, and mousse-like.
It should leave a ribbon trail when you lift the whisk.
Gently fold in the sifted flour and cocoa powder using a spatula, being careful not to knock out the air.
Pour the batter into the prepared tin, spreading it evenly into the corners.
Bake for 10–12 minutes, or until the sponge springs back when lightly pressed.
Roll the Sponge:
Lay a clean tea towel on your work surface and dust it generously with icing sugar.
Turn the sponge out onto the tea towel, peel off the parchment, and trim the edges for a neat finish.
While the sponge is still warm, roll it up tightly (starting from the short edge) with the tea towel inside. This helps it hold its shape.
Leave it to cool completely.
Prepare the Filling:
Whisk the double cream, icing sugar, and vanilla extract together until soft peaks form.
Prepare the Buttercream Topping:
Beat the softened butter in a bowl until smooth.
Gradually add the icing sugar and cocoa powder, mixing until combined.
Add milk, one tablespoon at a time, until the buttercream is smooth and spreadable.
Assemble the Log:
Carefully unroll the cooled sponge and spread the whipped cream evenly across the surface.
Re-roll the sponge (without the tea towel this time!) into a log shape. Place it seam-side down on a serving plate.
Spread the chocolate buttercream all over the log, using a palette knife or fork to create a bark-like texture.
Dust with icing sugar for a snowy effect, and decorate with holly sprigs, chocolate shavings, or festive sprinkles as desired
