Add the Biscuits: Remove the bowl from the heat and stir in the biscuit chunks until well coated in the chocolate mixture.
Transfer to the Tin: Pour the mixture into the prepared tin and press down with the back of a spoon to create an even layer.
Chill in the fridge for 20 minutes to set slightly.
Step 2: Add the Strawberry Chocolate Layer
Melt the White Chocolate: In a clean bowl, melt the strawberry-flavoured white chocolate over a pan of simmering water or in short microwave bursts, stirring until smooth.
Pour Over the Base: Spread the melted strawberry chocolate over the chilled rocky road base, smoothing it out with a palette knife.
